My fiancé has completed his PLAB exam and in the process of registering with GMC. His PLAB visa expires in April next year. We intend to get married in January next year in France then on our way back at the port of entry in uk apply for spouse visa. Will this work? We have evidence of living together for the past 8 months.

No. You can't apply for a visa at the port of entry.
